Patty Cake
Banana Scramble was what’s for breakfast.
In the mix: Half of a banana, almond mix, flax seeds, vanilla, cinnamon, oats.
This one was a little too moist, but still flip-able.
Rinsed off some fresh blueberries!
Assembled on an Ezekiel muffin.
Topped with the blueberries, peanut butter and coconut.

I was doing even more cleaning today!! I worked up quite the appetite.
Time for lunch in a wrap.
Honey goat cheese, olive tapenade, caramelized onions rolled up in a small tortilla.
Mini roll ups x2. Blue corn chips with some guacamole!
A random, but delicious lunch.

I’ve been seeing lots of organizational posts lately in the blogosphere. So I figured today was a good day to tackle the dreaded closet.
It still sort of looks a mess but at least I know what exactly is in there and where it is.
I keep my shoes and purses in the cubes below. Shirts and jackets on the rod. Miscellaneous things on top in the baskets [scarves, gloves, belts, etc.].
I need a bigger closet.

I needed to use up some dying veggies in my fridge.
So I chopped up some onion, celery, red and green bell pepper and garlic.
I grabbed some spices from the cabinet. Paprika, garlic powder, chili powder.
Then I grabbed some hot sauce, Worcestershire sauce and capers from the fridge.
I threw them all in a pan and sauteed them until soft. I also added some frozen corn in the mix too.
I cooled them off and then added the veggie mix to some canned salmon I had.
Then I added some mayo, dijon mustard, crushed saltine crackers, bread crumbs, one egg, salt and pepper.
Once mixed then I formed them into patties.
Seared them off in a pan and popped them on a sheet pan and threw them in the oven to make them crispy.
I needed something to go with the salmon cakes, so I sauteed some spinach up with olive oil and garlic.
Mmh these were good.

By the way, I still can’t stop eating those Samoas from the other day. I foresee them being gone in the next couple days.
I’ll be going up towards the lake tomorrow!! I think I’m wayyyy overdue for a haircut. Who knows how short I’ll go
Just kidding I wouldn’t go THAT short. I’m a chicken.

Wow Vanessa…those salmon patties look scrumptious..I may just do that this week.
Thanks! Salmon cakes are one of my go to lazy dinners. I always make extra to have as leftover too!
