Rockstar Salads
I am SO glad today’s workday is over and done with.
Today was one of those days where I am absolutely convinced that there was something in the water, and everyone was drinking it. Everyone was just SO on edge today.
Makes for a tense workday.
Anyways, let’s talk food.
More importantly, the Rockstar Salads of the night!!!
Sweet Potato Salad:
Roasted sweet potatoes, toasted macademia nuts, dried cherries, red onions, tangy dressing, arugula and spinach mix.
Southern Comfort Salad:
Arugula and spinach mix, strawberries, blueberries, blackberries, candied pecans, white balsamic vinaigrette.
Crab Cobb Salad:
Romaine lettuce, grape tomatoes, red onion, avocado, hard boiled eggs, crab meat, spiced buttermilk dressing.
Jicama and Apple Salad:
Jicama, red and green apples, red onion, carrots, honey lime yogurt dressing.
Spinach Salad:
Spinach, roasted red and golden beets, candied pecans, goat cheese, white balsamic vinaigrette.
Tossed Caprese Salad:
Red, green, yellow tomatoes, cilengene mozzarella, EVOO, salt and pepper, basil chiffonade.
House Salad:
Romaine lettuce, cucumbers, grape tomatoes, red onion, raspberry vinaigrette.
Black Bean Hummus

Now it’s time for a glass of wine and some rest and relaxation.
I randomly have the day off tomorrow, anyone around in Charlotte?? Suppose to be so nice too!
