A Foodie Kinda Day.

Boy am I tired. Today kicked my butt a little bit, but in a good way.  Today was all about the food. But when isn’t it?! It started with a hot cup of coffee [No spill today!! Woo hoo!!] and the best bowl of oats that I’ve had in a while.  I blame it on the toppings! In the pot was: rolled oats, banana, salt, cinnamon, brown sugar, pumpkin, milk, water, vanilla. Toppings were the Pumpkin spiced almond butter and homemade granola. Yum. That almond butter rocks.

Work was good today. From the start we [rockstars] decided we needed happy music to motivate us and set the tone for the day.  Cue Pandora 90’s alternative station.  Motivated, check. We did lots of fun things:

Trimmed some tuna.

Roasted some butternut squash. [I love butternut. The end.]

Baked some buttery, garlic croutons. Mmhh bread.

Water  + Pot = Fail [Almost had a waterfall on our hands. Phew. Glad Jaime caught that one! 🙂 ]

Food star of the night? Bay Scallop Ceviche. Definitely got some awesome feedback on these little guys!

Some close runner ups tonight:

Three Bean Salad: Yellow wax, green and kidney beans marinated in a cider vinaigrette with minced red onion and celery.

Roasted Winter Vegetable Salad: Roasted parsnips, turnips, butternut squash, red onions, toasted pecans, maple vinaigrette.

Lentil and Beet Salad: Green lentils, roasted red beets, goat cheese, parsley, sherry vinaigrette.

Tabbouleh Salad: Bulgur wheat, mint, parsley, green onion, tomatoes, extra virgin olive oil, lemon juice.

Pepper Steak Salad: Garlic pepper skirt steak, roasted mushrooms, roasted onions, blue cheese crumbles, ranch dressing.

Italian Antipasti Salad: Iceberg lettuce, salami, ham, pepperoni, green olives, shaved parmesan, croutons, red wine vinaigrette.

Grilled Tuna Nicoise Salad: Grilled Ahi tuna, hard boiled eggs, olives, red onions, cherry tomatoes, haricot vert and oregano vinaigrette.

Bay Scallop Ceviche: Bay scallops, tomatoes, onions, jalapenos, tomato juice, ketchup, lime, lemon, cilantro, orange juice.

Three Tomato and Onion Salad: Chunked red, yellow, green tomatoes, red onions, basil, green onions, red wine vinaigrette.

My dinner, a little bit of everything: Tabbouleh, ceviche, “Slap Yo Mama” tater salad, roasted winter vegetable salad, garlic crostinis. Yummy.

I’m off tomorrow so I’m look forward to sleeping in past 7am! Wahooo! Don’t know what’s in store for tomorrow. Definitely some cleaning. Gross.

Listening to Elton John’s “Tiny Dancer” and then going to bed. Perfect ending to a good day 🙂
