February 9, 2011

This morning things started off fine.

Got the go to use my kitchen sink and washer.

I ate a hummus and feta wrap up.

And a Chobani yogurt with KERF Peanut Butter, blueberries and almonds.

I decided that since I was able to wash dishes again that I would go grocery shopping!!

I went to 4 stores. FOUR! Earthfare, TJ’s, Harris Teeter and Target. I’m nutzo.

I picked up some good buys though! Coconut oil, garbanzo bean flour, rice cereal, and much much more!

So I unload my groceries, and start doing the dishes from lunch.

I maybe had my water running for three minutes TOPS!  I get a call from the landlord, I’m leaking again.  No more dishes for me tonight.  Did I mention I was halfway through cooking dinner??

Dishes FAIL.

So now I have dirty dishes in my sink I can’t use.

Anyways dinner was good for what it’s worth.

I’ve been feeling a little crummy as of lately, so I thought some soup would be a wise choice.

I had some potatoes in the fridge, so I chopped them up and threw them in a pan with some olive oil in it.

I added some onion and fennel in the mix too.  To spice it up, I added some nutmeg, paprika and oregano.

I deglazed the pan with some white wine [because everything is better with a little vino] and let the alcohol cook off.

Then I added some chicken stock and let it simmer for a bit until everything got soft.

I took my immersion blender and blended the soup for a smoother consistency.

At this stage I usually give the soup a taste.  I think I added some more nutmeg and salt and pepper.

I bought this delicious block of Colby Jack cheese at TJs’ today.  I really wanted some with dinner, so i had to figure out something to have it on [because on it’s own, cheese is lethal].

Since I was having soup I decided a crunch factor was necessary!!  So problem solved, I made cheesey croutons for on top of the soup.

Plopped on a dollop of pesto for a little something extra.

I love soup.

Since I was all kinds of “bahumbug” today, I needed some chocolate to cheer me up.

More chocolate chip cookies?

Um, yes please!

I used my Silpat for the first time!

I also set off my smoke alarm….again.

Here’s hoping tomorrow is a better day!!!

I have a prep day at work tomorrow.  The plumber has a big workday at my apartment too tomorrow.

Fun times for everyone.

Vanessa 🙂

P.S. I’m addicted to Modern Family!!
