Today was just one of those mornings where I was just simply craving a smoothie.
In the VitaMix went, mixed frozen berries, half of a frozen banana, half of a frozen avocado, dollop of greek yogurt, splash of orange juice, sprinkle of rolled oats and a few small kale leaves.
For some reason lately when I’ve been making smoothies, they all turn out purple!!
I topped the smoothie with, granola, fresh blueberries and a peanut butter “sauce” [mixed the pb with almond milk].
I love eating smoothies in a bowl with a spoon, it makes me feel like I’m eating something rather than just drinking something.
Twas’ a lovely breakfast.
I did a lot of random things today. I started a new book. I FINALLY did my taxes!!
I got in an argument with UPS. They tried to tell me the reason my package was late was because they were holding it. When I asked why they were holding it, they said I gave an incorrect address. I told them my address, they said that’s what I gave them before. They also said the driver pretty much said I gave a bad apartment number, and didn’t exist. Really UPS? Pretty sure I get packages and mail ALL THE TIME! Needless to say, she said it will be shipped tomorrow. For her sake, I hope it is. [Sorry I needed to vent about that.]
And I made a random yogurt sauce.
I had about half of a cucumber that was on its way out, so I needed to do something with it.
So I grated it.
Then I had a little bit more yogurt leftover so I combine the cucumbers with that.
Then I added some minced garlic, cumin, dill, salt, pepper, lemon zest and juice.
Now instead of having a rotting cucumber in my fridge, I have a tzatziki “esque” sauce.
**Note to self: Must use this before the end of the week.**
I was not really sure what I wanted for dinner tonight. If organizing my kitchen has shown me one thing, it’s that I have A LOT of food. I mean personally, I need options in my life. I’d much rather have a fully stocked pantry, then have to go out to the grocery store every time I want to make something. But that’s just me.
Anyways, as I was saying I didn’t know what I wanted for dinner. So I figured I’d do something from my ever expanding pantry.
I channeled an old childhood favorite: Sloppy Joe’s.
I didn’t have any ground meat on hand, so I improvised and cooked up some lentils I had in my pantry.
From the pantry I grabbed: Cumin, chili powder, paprika, garlic powder, diced tomatoes, tomato paste.
I chopped up two smaller carrots and about half of a red onion. Heated up some olive oil in a pan and threw them in.
I waited till they started to get soft, then I added the spices [listed above], garlic and salt and pepper.
While the spices and veggies were doing their thang I had fun with the open spice jars.

I then deglazed the pan with a splash of vegetable stock, then added some tomato paste and diced tomatoes.
Then in went the lentils.
I also didn’t have any buns that normally you would use for sloppy joe’s. So I defrosted two slices of GH honey whole wheat bread and called it dinner.
I also added a small sprinkling of parmesan cheese on top too. Let’s face it, everything is better with cheese!
Even though this is an unconventional way of making sloppy joe’s, it still brought me back to eating it as a child. The flavors were spot on!! Don’t worry it lived up to it’s name and was super sloppy. 🙂
See I told you guys I made another batch of these…..
Donut muffins. It’s what’s for dessert.
** Side note: As I was making the second batch of these, I had a thought. Think of the possibilities with fillings and toppings for these!! I’m thinking a mascarpone cream will be so delicious with these. Although you can never go wrong with chocolate. THESE ARE TROUBLE!! **
Off to brew me a cup of tea and eat a donut muffin. Then it’s Grey’s Anatomy time!

P.S. Anyone have any recommendations for good workout places/gyms for cheap here in Charlotte. I’m afraid I need to start getting more active. I say this as I near the end of my second batch of donut muffins. Sigh…
