Sunday Blues
Breakfast is back 🙂
Cup of joe and a bowl of pumpkin banana oatmeal.
In the mix: rolled oats, almond milk, water, cinnamon, salt, pumpkin puree, banana.
Toppings include: fresh blueberries, shredded coconut and pecans.
At least breakfast was good today.

Other than that, today was a horrible day. The weather was horrible. Work was horrible. Getting off of work was horrible.
I was a man down at work today, so now I’m behind schedule for tomorrow. Due to me rushing through trimming some skirt steak, I sliced my finger. Let me just tell you how AWESOME that was. Of course it’s on the fingertip of my index finger. Now I feel handicapped.
Oh then I get home from work to find that my powere charger for my Mac is dead. FABULOUS!! One con to owning an expensive laptop? Expensive accessories!! Gahhhh. One power cord for $80. Really Apple?
I also bought the most expensive tank of gas today. $34 for my little car. I feel bad for everyone with SUVS and diesel trucks!

At least I have dinner in the bag tonight. Leftover lentil burgers that I made yesterday!
I got inspired by looking at 101 Cookbooks. It’s a perfect use of leftover cooked lentils.
I had about 1 1/2 cups of cooked lentils. I threw them in the food processor with two eggs and some salt.
I blended it all together like so.
I transferred it into a mixing bowl and stirred in some onions.
And then some breadcrumbs and a splash of worcestershire sauce.
I wanted to give these burgers a little “zest” so I threw some thai basil chiffonade into the mix.
Then I formed them into patties and pan seared them for a few minutes on each side [just until warmed through].
Cue lentil burger photo shoot…

I sauteed up some cabbage to go on the side and topped the burgers with the tzatziki “esque” sauce from the other day and some fresh avocado.

Now I am off to go hide under my covers in the fetal position, hoping nothing else bad will happen today.

Eeek that sounds like a rough day!! I hope it gets better!
If it makes you feel better, my tiny car costs $60 to fill, and I fill it <1x per week… because I drive to school and back 1 hour each way… YUCK
On a happy note… how good were those burgers? They look delish!
Oh my goodness!! $60?!?! That’s insane!! Im sorry 😦 The burgers were good!! Doesn’t even need a bun!
