Did you know that today was Pi day?
Well it is. So in honor of that, I wanted to make a pie. Pie, pi, get it?
I conveniently had some dying apples in my fridge. Perfect.
I peeled them and sliced them up. I put them in a bowl with a squeeze of lemon juice on them.
This part I totally cheated on. I once again, conveniently, had some pre made pie crust in the freezer. So I thawed it, rolled it and cut it into little circles.
I based the size on the size of these little ceramic bakers I had.
I just pressed one little circle on the bottom on the baker.
Then I mixed up some sugar, brown sugar, cinnamon, nutmeg and flour together in a separate bowl.
Once mixed, I added that mixture to the apples and gave them a good toss.
Then I spooned the seasoned apples in the baker on top of the pie crust.
I rolled and cut the remaining pie crust to about the same size and placed it over top the apples.
I pressed the dough around the sides and cut three small vents in the top.
Then I made a small batch of egg wash to brush on top of the crust for some good color.
I topped the egg wash with some cinnamon sugar, because you can just never have enough.
I baked it in a 450 degree oven for made 15 minutes. Don’t quote me on that time. You just want to bake it until the crust is cooked and it’s all bubbly and delicious.
I like making individual desserts, that way you don’t have a whole pie staring at you, waiting patiently for you to eat it.
I love you pie, but my thighs do not.
Even though Pi day is the celebration of the world’s most irrational number, what better way to celebrate than to eat actual PIE!
