One Heck of a Hump Day

6 AM came way too fast today.

Alas, I woke up due to my overexcitement for breakfast.

Is it sad that the highlight of my day is food? Maybe so.

I got my plate ready.

Isn’t that the cutest plate?  I got it from West Elm a while ago.

I started breakfast by frying a couple eggs.

Then i toasted an english muffin, slathered a little cream cheese on it and placed the salmon on top.

Of course capers were involved.  I love capers.

This was so delicious.

Smoked salmon craving complete 🙂

Work was just as I thought it would be today, long.

For some reason I just could not stop munching on food all day.  It’s weird because usually I never eat a whole lot at work because it tends to tire me.

Earlier in the day, I mentioned how I’ve been wanting enchiladas.

Well, you ask and you shall receive I guess.

Spicy chicken enchiladas with salsa verde, cheese, sour cream, tomatoes and lettuce.

Mary, one of the ladies I work with, whipped these up in no time.  I was so excited you have no idea.

It’s your lucky day.  I took some salad pictures today.

Watermelon Salad: Watermelon, shaved fennel, shaved radish, orange segments, mint syrup.

I’ve done this salad before, but with a balsamic syrup.  I preferred the mint syrup I used this time.  It was very light and refreshing.  Perfect for a sunny day in Charlotte 🙂

Roasted Vegetable Salad:  roasted zucchini, yellow squash, red and yellow bell peppers, red onions, eggplant, garlic, shallots, herbs, cumin lime vinaigrette.

I’m a huge fan of roasted veggies, so I like this salad.  The vinaigrette gives it a nice twist.

Arugula Citrus Salad:  Arugula, slice red and green apples, jicama, red onions, red and yellow peppers, citrus vinaigrette.

Another light and refreshing salad. I love all of the citrus notes.

Roasted Beet Salad:  Roasted red and golden beets, citrus vinaigrette, goat cheese and parsley.

This is turning into quite the classic combination for me.

Fingerling Potato Salad: Roasted fingerling potatoes, arugula, lemon zest and juice, pine nuts, basil, EVOO.

Honestly who doesn’t love roasted potatoes?? I know I do.

It was a slower service today. Which made the evening drag on even longer than it already was.

It also should be noted, that tonight while I was sautéing carrots on the line, I got black pepper in my eye.  I’m not sure how it happened.  All I know is that I went to go season the carrots, and a gust of wind or something gave the pepper the perfect air right into my eye.  Talk about an uncomfortable feeling.  Guess it could have been worse.  I’ll take pepper over hot oil any day.

Needless to say I was glad when the day was over.

Not sure what I’ll be up to tomorrow.  Anything going on in Charlotte?

P.S. What the hell Top Chef!!!!!! At least Richard is in the finale…

RIP Elizabeth Taylor.  I loved her in National Velvet and Little Women!! She will be missed.  One of the last of the old time movie stars….
