Spring Cookies

March 31, 2011

Today I went to Trader Joe’s.

My bank account now hates me.

Sigh…

But I did come back with these babies.

I knew exactly what I wanted to do with them.

Once I saw Jenna’s cookies over at Eat, Live, Run, I knew I had to make them immediately.  [Check out her site for the recipe!].

I started with some butter and brown sugar in a bowl.

Then creamed them together until creamy.

Next came the secret ingredient.  Well maybe not so secret. TJ’s Sunflower Seed Butter aka crack.

I just mixed the sunflower seed butter in with the creamed butter and sugar until combined.

Then I added an egg and a bit of vanilla.

Mixed it all up.

Then I added the dry ingredients: Flour, salt, baking powder to the wet ingredients.

Hello lovelies…

Then I just mixed in the chocolate covered sunflower seeds.

I just scooped them onto a lined baking sheet like so.

Aren’t those little dough balls adorable??

I gave them a smush to make them flatter like discs.  Then popped them into a a preheated 350 degree oven for about 15 minutes.

Out came these babies.

These were killer cookies.

If you like peanut butter cookies, try these immediately.

Perfect for Easter!!

Then as I was doing dishes, this happened.

I almost cried.

Great. Now what??

Guess I’m busting out the good old french press tomorrow.

Have I mentioned that I haven’t used a french press in years?

Yea, this should be interesting…

I’m going to watch the musical Grey’s episode.

Excited for some fun stuff planned tomorrow! Stay tuned!

Goodnight!

Vanessa 🙂
