Frustrating Friday

Before I begin to tell you all about my frustrating friday, let’s rewind back to yesterday’s dinner.

Remember how I had the idea of using the asparagus pesto in pasta?

Well I did and it totally worked.

I just boiled up some pasta, sauteed some veggies and chicken sausage and tossed it all together with the pesto.

Amazing!! It was SO creamy.  It was alfredo sauce without the cream. The lemon and garlic really came through too.

Dinner success.

In other news, today like I said was frustrating.

I had little to no motivation to get started this morning due to my insomnia that I had last night.  I seriously tossed and turned ALL night.

When I finally got dressed for the day, I ventured over to Southpark mall.  I was hoping to find a few spring fashion finds.

Well, if you follow me on my new Twitter account, you’ll know that I failed miserably.

You know it’s a bad day when you can’t even find something worth buying at Anthropologie!
So to lift my spirits and spoil my dinner I splurged on some froyo from Yoforia.
On the way home from the mall I stopped at Earthfare to pick up some more oats as well as a few other things.  At least food is always on my side.
When I got home, i had a fantastic package waiting for me!
A new tripod!!!

One of my Mom’s cousins, Gail is a fabulous photographer.  Seriously she is, check out her website and her blog. 🙂

Anyways, she had seen a few posts back that I was looking into getting a tripod.  Then she messaged me and said she had an extra one lying around and that should send it to me for the cost of shipping.  Of course I jumped at the offer!!

I can’t wait to figure out the logistics of it and start playing around using it!! Thanks again Gail! 🙂

Tonight I was in one of those weird moods again where all I was craving was a huge salad.

Seriously who am I??

When I was at Earthfare I ventured outside my box and bought a package of tofu.  It was on sale.  I was feeling adventurous.  It was on sale.

I cooked the tofu per Emily’s instructions .

In the bowl went: romaine lettuce, black beans, grape tomatoes, avocado, tofu, red wine vinaigrette.

The vinaigrette was simply a glo0p of whole grain mustard, a squeeze of honey, a pour of red wine vinegar, and a heavier pour of EVOO.

Yes those are measurements according to me.  That’s usually how I cook, by gloops and pours.  Yep.

So verdict on the tofu?

It was alright.  It wasn’t horrible but I wasn’t blown away either.  Maybe I just made it too simple.  Maybe I need to give it a quick marinade next time.

At any rate, I ate it all.

My craving was fulfilled.

Oh and I also was able to take my dinner pictures on my balcony today!! I think they look so much better outside than my normal pictures.

Note to self, eat an earlier dinner!!

Now it’s time for a movie, some dessert and playing with my tripod.

Amazing dinner plans tomorrow night!! I can’t wait.

Is it tacky to wear sweatpants to a restaurant?? I fear I may need them after my meal tomorrow.

    That looks really good! I actually randomly decided to put pesto in a salad today, and it was good, although it was hot pesto and the temperature difference was a little weird.

    I guess I never have seen any indication about where you live, but I think YOU MUST LIVE IN CHARLOTTE. Right? Let me know. Would love to get together with you. We could stroll with our cameras and take shots. Or grab our saute pans and do some cooking.

    BTW, you might not have been wild about the dish you made, but the photos were really nice. I am not an expert on tofu by any stretch of the imagination, but I think you’re on the mark about marinating it the next time. And start with the extra-firm. The stuff just has no flavor on its own, ya know.

    Yes, twitter can be a problem. I tend to switch back and forth from obsessed to completely forgetting to look/do it! I have a problem making really flavorful tofu too! It usually ends up too plain for me to have unless its more of an extra in a dish, rather than the main attraction. I have crumbled up tofu before and added it to homemade tomato sauce, as sort of a meat substitute. It was a pretty good!

      Haha, yea I’m sure by next week it will start to lose its thrill for me. We shall see. Hmm that’s a fun way to use tofu! I could see how that would work! I thought I would just give it a shot on its own.
