Easter Sunday

Hey guys!

Hope everyone had a wonderful Easter Sunday!!

I had a somewhat lazy one, which is okay every now and again. Instead of cooking a typical Easter dinner, my Aunt, Uncle and me went out for a late brunch!

We ended up going to Mimosa Grill here in Charlotte.

For this Easter Sunday, they offered a full buffet and a small, but unlimited tapas menu to try.

First we filled up a plate from the buffet.

My plate had shrimp and Anson Mills grits, salmon (smoked and fresh), some veggies, and some cheese cubes.

Then we tried some of the tapas menu. First up, the walnut crusted French toast with banana chutney and syrup.

I really liked the French toast. I could have had a big plate of that and been completely satisfied.

Next we tried what the waiter called “their specialty”, the trout.

The trout was crusted with pecans and served with lemon butter, potato purée and a peach chutney. All in all, not bad. The fish was cooked well though, which I appreciate!

Then it was time for coffee.

My Uncle pointed this out, but doesn’t it look like the cup has a face on it?! So funny.

We also got a plate of some of the desserts offered.

I tasted a mini pecan tart, mini carrot cake, a brownie slice and some fruit. I was a little disappointed in the dessert. My opinion not worth the calories! So I took a bite of each and stuck to the fruit.

We left the restaurant and took a quick stroll around Charlotte by the museums. I was hating that I had forgotten my camera at home. So IPhone pictures will have to suffice.

Charlotte has a lot of artsy sculptures and little details that I don’t take enough time to appreciate. So it was nice to walk around and soak it all in. One day I’d like to just take a day and stroll around the city and take pictures of the little details. Let me know if anyone else is interested in that!!

Anyways, I’m afraid the rest of my night will be lazy. My tomato plants are planted and I have nothing else on my agenda.

    I have been looking forward to see what you would have cooked for Easter dinner all week! Oh well, the picture of the two kids in brick are good enough.

      I’m sorry! I wish I could have cooked for Easter too. It was nice to relax though. Doesn’t happen too often. Glad you enjoyed the brick kiddos.

    I love the new installments on the green at Wachovia, especially the skull. Brad and I had a really great time playing in them one night with Rascal. 🙂

      I know I love them! Oh I can only imagine how fun that would have been with Rascal! I really want to go to some of the museums like the new Mint and the Betchler.
