Not So Springy
Man oh man, I know everyone’s been saying “Spring Ahead”. But let me you, I was definitely NOT springy today.
All I wanted to do was eat, bake and play with my new love aka Iphone.
I figured I’m working all week so why not have one more day of laziness right?
For dinner I needed to use up some of the dying produce in my fridge.
So I cooked up some fluffy whole wheat cous cous.
Then I roasted cauliflower, brussels sprouts, green bell pepper and white onion with some olive oil, salt and pepper.
As the vegetables were roasting in the oven, I felt the need to kick up the dish a notch. I mean how lame-o is roasted veggies and cous cous?
So I popped open the fig balsamic vinegar I got from The Crushed Olive a while back.
So I drizzled the veggie cous cous bowl with some of the vinegar.
Simple and delicious. I flippin love balsamic vinegar.
And now I have a few less dying vegetables in my fridge.
Oh and did I mention how this experimental brownie creation just came out of the oven??
Yeah, I went there.
There’s only one problem, I don’t know if I have the willpower to let them cool.
I have issues, I swear.
Tomorrow is my last day off before the long work week, so I’ll probably be doing a few things around Charlotte!
